Cook and Tell – Raspberry Clafoutis

You’re probably wondering whether I always make new dishes. Well, I want to let you know that I repeat the successful dishes over and over. One of the favorites that has made its return is the clafoutis. You might remember that a few months ago I shared the Plum Clafoutis I prepared.

This time around I decided to recreate the clafoutis based on the original recipe, with no alternations (as I like to do all the time). So this time I made Raspberry Clafoutis just as the Food & Wine Magazine recipe says.

One tip, butter the dish well, so it’s easy to take the clafoutis out when serving. Sounds familiar? That’s because I completely forgot to butter the baking dish originally, and even though I buttered it this time, it was still sticking just a bit. But in the end even though I had to add some extra muscle to get the slice out, it still tasted awesome!

Breakfast of Champions

This morning I decided to treat myself to a late breakfast. What was my breakfast of choice you ask? Berry smoothie and mini blueberry pancakes.

I cheated on this one, as I made the pancakes from a pancake mix and just added water and frozen blueberries. So if you have a favorite pancake mix just add some fresh or frozen blueberries and you’re good to go. For the smoothie, I blended frozen blueberries, raspberries and fresh blackberries with ice and soy milk.

Visit to Reno Part 2…Baked Chicken, Wild Rice Medley & Salad

Now that you’ve had plenty of time to feast your eyes (and hopefully just feast) on the Ham and Cheese Quiche, it’s time to move on to the second part of our visit…lunch.

On Saturday afternoon after a lovely hike in the near by park and a game of Cranium, we had a lovely lunch. Our lunch consisted of baked chicken drumsticks, wild rice medley and a salad.

Here’s what you’ll need to create this delicious meal.

Chicken drumsticks:
1 (3 pound) whole chicken, cut into pieces
5 tablespoons chopped onion
4 tablespoons soy sauce
2 cloves minced garlic
2 tablespoons honey
To Marinate: Arrange chicken pieces in a baking dish.
In a small bowl combine the onion, soy sauce, garlic and honey; mix together and spoon mixture over chicken. Cover dish and refrigerate to marinate for 1 hour, turning pieces once.
Preheat oven to 375 degrees F
Bake chicken at 375 degrees F for 45 minutes. Turn pieces over then continue baking for about 10 minutes, or until chicken is tender and cooked through and juices run clear.

Wild Rice Medley:
Start with a wild rice mix or create your own by combining different types of wild rice. Cook in rice cooker or stovetop. Once cooked, add dried cranberries, roasted pine nuts and anything else your heart desires (onions, mushrooms, etc.)

Salad:
In a large bowl, mix together mixed greens, cut cucumbers, cut tomato pieces, raspberries and almond slivers. Add balsamic vinegar and oil, toss and serve.

Wheat and Honey Pancakes with Berry Syrup

Another day in Vika’s kitchen. Today Vika whipped up a batch of delicious and health-conscious pancakes. You won’t need a lot of time or ingredients for these easy-to-make pancakes.
Here is what you will need:
Krusteaz Wheat & Honey pancake mix
Frozen blueberries and raspberries (or any other frozen berries)
Sugar
Cooking Spray

Prepare pancakes as directed, mix the berries with sugar in a cooking pot. Cook until defrosted and slightly boiling. Make sure not to overcook as berries will fall apart.

For a side, Vika threw together a homemade iced tea. To make the iced tea you will need the following:
Brewed Tea (pick a flavor to your liking)
Lemon slices
Orange slices
Ice
Brew hot tea as you would normally and cool. Add ice, lemon slices and orange slice.
