Cook and Tell: Baked Brie in Puff Pastry

Continuing on with the carb theme. Today I wanted to share a simple appetizer with you. It came to me as I was sitting at home and craving a snack. My husband is a big fan of Brie. He buys the big rounds of Brie, so we almost always have it at home. I tend to keep a package of puff pastry squares on hand as well. Together these two great ingredients make a quick, easy and delicious snack, or appetizer.

Baked Brie in Puff Pastry
Ingredients:
Puff Pastry Squares
Brie Cheese
1 egg or egg white (for brushing)
Cooking spray

Preparation:

Preheat the oven to 350 degrees Fahrenheit.

Spray a cookie sheet with cooking spray.

Cut each puff pastry square into 4 small squares. Cut Brie into small pieces (without crust) and place each piece of cheese on the small puff pastry squares. Fold each of the four corners of each puff pastry square over the cheese, creating little pouches. Place the folded puff pastry pouches onto the cookie sheet.

Beat one egg. Brush each puff pastry pouch with the beaten egg.

Cook for approximately 25 minutes, or until the puff pastry pouches are golden and nicely puffed up.

There it is, simple and delicious. I can pop these babies in like chips. I know it’s probably not the greatest idea, but they are so so good!

Cook and Tell: Meat in Puff Pastry

I’ve been a bit lazy about cooking lately. But when there is leftover meat, you gotta get creative and put it to use. After giving it some thought, and a look at the available ingredients in the kitchen, I cooked up some pretty damn good meat in puff pastry (and this isn’t just my opinion). I am proud to say that I cooked this up (literally and otherwise) all on my own.

Here is what my mystery dish includes:

Less than half a pound of ground beef
Less than half a package of italian sausage
3 pinches of Emeril’s essence (left over from the Stuffed Pepper Dish I shared earlier)
Salt to taste
Bread crumbs
Fresh chopped parsley
Shredded cheddar cheese
10 Puff pastry squares
One beaten egg (for brushing)

These are the steps to put my creation together:

Heat oven to 375 degrees.

Mix the meats, Emeril’s essence, salt, bread crumbs, parsley and shredded cheese in a mixing bowl. From the mixture create 10 small meatballs and place each meatball on a heated frying pan coated with pam cooking spray. Slightly flatten each meatball into a small patty, and cook on the frying pan until the meat patties are browned.

Place each browned meat patty on a single puff pastry square. Fold the square around the meat tightly, creating a sort of baggy. Place each pastry baggy on a prepared baking sheet coated with pam cooking spray. Brush each pastry baggy with beaten egg.

Bake the pastries for approximately 30 minutes or until golden.

Dessert So Easy…A Guy Can Make It!

Yes guys, this one is for you! I received comments/requests that I should share dishes that are easy enough for guys to make. Well boys these little cherry puff pastry treats should be very easy for you to impress the ladies with.

You will only need four items for this dessert…

Ingredients:
Puff pastry dough squares (5″x5″) (can be purchased)
Frozen pitted cherries
1 egg
Confections sugar

Preparation:

Preheat the oven to 350 degrees Fahrenheit. Cut the puff pastry square across to create two triangles. Place one (or two small) cherry on each triangle. Fold the triangle over the cherry to create a smaller triangle. Press the sides with a fork to make sure the triangle is sealed. Press the sealed triangle on a greased cookie sheet. Repeat with other squares until the cookie sheet is full. I used six squares to create twelve triangles. Beat one egg and brush each triangle with the egg.

Place the cookie sheet with the triangles in the oven and bake for about 25 minutes, or until the triangles are golden brown and have risen.

Take the cookie sheet out of the oven and let the triangles cool off. Once triangles are cool, top them with some confections sugar.

Voila…you’ve got yourself a great dessert to share with that someone special!

 

Puff Pastry Triangles

Before proceeding to today’s recipe I wanted to share that I was the lucky winner of a cordless Cuisinart hand held blender, courtesy of FoodBuzz.com. This was an unexpected and exciting occurrence. I received the blender this evening. I want to thank FoodBuzz.com for the lovely surprise!!!

Now to our next yummy dish. Today I’d like to share with you some tasty treats. In the spirit of easy-to-make dishes, this is a VERY easy to make dessert. Feast your eyes on puff pastry triangles with cherry filling.
Puff-Pastry-Triangle

Here is what you need to make these tasty triangles:
10 Puff pastry dough squares (usually sold frozen)
1 can of cherry topping
1 egg white, beaten
Powdered sugar
cooking spray

Preheat oven to 350 Degrees Fahrenheit.

Thaw frozen pastry squares until soft. Place approximately 6 cherries with sauce onto one pastry square. Fold over the pastry square to create a triangle. Press the edges to seal. I usually press the edges with a fork to make sure they are sealed and to create attractive edges. Brush the edges with beaten egg whites. Repeat these steps for the rest of the puff pastry squares.

Spray a cookie sheet with cooking spray (to prevent the triangles from sticking). Place triangles on cookie sheet and bake for approximately 30 minutes, or until the pastry rises and becomes golden. Top with some powdered sugar. Let cool and serve.
