Cook and Tell: Turkey Meatballs with Goat Cheese

It’s taken me a while to share with you a dish that I made quite some time ago. You know those pesky family and household demands, can’t get away from them. But I am finally here doing so. Quite a bit ago I happened to stumble upon one of Rachel Ray’s segments on the Food Network channel. She was sharing one of her 30-minute meals, and it was exactly what I was looking for. It was a weekday, and I needed to come up with something for dinner, pronto.

As it turns out this 30-minute meal actually takes 50 minutes to make (20 minutes for prep and 30 minutes to cook). Nevertheless, it was a great addition to my weeknights dinner repertoire. I used Rachel’s recipe idea and adapted it for the ingredients I had on hand. You can try Rachel’s original recipe for Gorgonzola Filled Meatballs, Bay and Onion Creamy Tomato Gravy or you can try my adaptation of it.

Turkey Meatballs with Goat Cheese
Ingredients
1lb Ground Turkey
Salt and Pepper (to taste)
1 Large Egg
Minced Garlic (to taste)
Bread Crumbs
Grated Parmesan cheese
Goat Cheese
Extra-Virgin Olive Oil

Preparation:
Preheat oven to 400 Degrees F.

Combine the first six ingredients. Roll the combined meat mixture into equal size balls. My meatballs were on the smaller side. Arrange meatballs on a baking sheet. Coat each meatball with olive oil. With the back of a wooden spoon, make indentations in each meatball. Place goat cheese into each indentation.

Bake for about 15-20 minutes, or until meatballs are golden and cooked through.

My version of the meatballs might just actually take 30 minutes, and they are pretty tasty.

 

Cook and Tell – Goat Cheese Stuffed Eggs

As promised, I am on a roll and I have yet another meatless dish to share. As many of you aspiring chefs know, the Food Network has a wealth of information on everything food related. So it should come as no surprise that I found this dish on the Food Network as well, (my recipe box on that site is growing at a fast pace).

A while back I shared a recipe for basic deviled eggs. This dish is in the deviled eggs family but with a bit of a twist. I present to you Goat Cheese Stuffed Eggs. Oh goat cheese…how I’ve missed you…

Stuffed Eggs with Goat Cheese

Here is the recipe for this fabulous dish. As you know I tend to omit things (due to inability to find the ingredient, or due to pure laziness too leave the house). This dish is no different. If you happen not have chutney, celery, or parsley, these eggs will still taste great (dish is husband approved).

Stuffed eggs are a great party dish. You could stuff them with almost anything. How many different varieties of stuffed eggs can you make? Maybe a stuffed egg themed party?;)

 

Strawberry-Goat Cheese Bruschetta

Last week my boss shared with me a great recipe for strawberry goat cheese bruschetta. I have to say this is one of the few times that I didn’t lose any time, and on the way home stopped by the store and picked up all the ingredients needed for this amazing appetizer. In fact I made the dish that very same night, when I got home. The strawberry goat cheese bruschetta was the main meal for me that night.

This appetizer is mouth watering (exactly the sensation I experienced when I first laid eyes on it). And why not? All the ingredients individual and together are delicious. So drool no longer, instead take 20 minutes to make the Strawberry Goat Cheese Bruschetta from the Better Homes and Gardens website.

 

Healthy Snack

On Sunday I decided to make a healthy snack. I gave it some thought and here is what I came up with…
Goat Cheese Toasties with Arugula Salad
…an Arugula salad with Goat Cheese Toasties.

To create this all you’ll need is a baguette, cut up into slices, some beaten eggs and garlic powder. Dip the baguette slices in beaten eggs (mixed with garlic powder) and bake for 10-15 minutes at 325F.

To create the lovely salad, you’ll need some arugula leaves, tomatoes (cherry, pear, and/or grape), cucumbers and Balsamic Vinaigrette Dressing.

Cut up the vegetables, toss with the Balsamic Vinaigrette Dressing and serve with the toasties, topped with goat cheese.
