Cook and Tell: Banana Nut Bread

A few weeks ago, I decided to put to use a couple of bananas we had laying around at the end of the week and some non-fat milk that needed to be used up. I’ve attempted various breads before, with variable levels of success, so felt relatively comfortable with the idea of making banana bread.

I found a great recipe on Epicurious App, which is just as easily found on the Epicurious website. I knew going in that I didn’t have the required walnuts, due to a miscommunication with hubby, which left me with raw, unsalted, whole almonds. No worries, this did not deter me. I had some pecan chips on hand and used those. However, as I started the preparation process, I realized that I didn’t have enough flour…Now this put a bit of a damper on my plans.

But no fear, with quick thinking I decided to substitute half the flour with matzo meal. I was concerned that the bread wouldn’t turn out just right. When I mixed all the ingredients, I crossed my fingers and put the batter in the oven.

I was very happy to see the bread turn out just right. It was fresh and moist, and I received a lot of compliments. Try it, you might just like it.

Cook and Tell: Chocolate Chip Zucchini Bread with Walnuts

A while ago I found a recipe for zucchini bread with walnuts. The recipe looked intriguing and I decided to try it out. Everything went well, until I realized that I put too much dough mixture into the loaf pan. The result was a minor disaster, it consisted of an oven filled with overflowing dough, which rose outside the borders of the loaf pan. I was thoroughly disappointed that I made such a rookie mistake. Thankfully, what was left in the loaf pan was still salvageable, and surprisingly was pretty tasty.

Recently I decided to try the bread again. However, I couldn’t find the original recipe (hence, I am currently working on organizing all of my recipes).  Therefore, I had to start my search from scratch.

In my new search, I came upon a different zucchini bread recipe. This one was from Paula Deen, her Chocolate Chip Zucchini Bread recipe.

Chocolate Chip Zucchini BreadI followed the recipe as is. Except, (there it is again), I used mostly walnuts as opposed to pecans. Not sure why, but I am more favorable to walnuts over pecans. The bread turned out fantastically. Although it took about an hour for it to bake through, as opposed to 50 minutes (at least in my oven).  Hubby really enjoyed it.

Cooking Step-by-Step – Sirniki

A little while ago I found out that a friend of ours has developed quite a craving for sirniki. Sirniki in this part of the world are also known as Farmer’s Cheese Pancakes. I promised our friend I that I will make sirniki and document the steps so that she can enjoy them, in the comfort of her own home, whenever the fancy strikes her:) I, this is for you!

To make sirniki you will need the following ingredients (I never officially measured the ingredients so you’ll just have to eye it).

1. Farmer’s Cheese (a.k.a Tvorog) (approximately 1 package)
2. One egg
3. One tablespoon of sugar
4. Salt (to taste)
5. One tablespoon of all purpose flour
6. Raisins (to your liking)

To begin, place the farmer’s cheese into a medium sized bowl

Add the egg and mix with farmer’s cheese

Mix in salt

Mix in sugar

Mix in raisins

Mix in flour

Once all the ingredients are well mixed, take the mixture by the tablespoon full and form into small patties

Spray a hot frying pan with cooking spray, and add the sirniki, a couple at a time. Fry the sirniki, turning after a few minutes, until golden brown on each side

Sunday Breakfast Series – Breakfast Pizza

If you follow Smitten Kitchen, (as if I may be so lucky to share some of the same fans) :) you probably read the breakfast pizza post that was featured by of Smitten Kitchen.

As I commented on that post and said that I will definitely be trying out the recipe, I had to keep true to my word. So what better way to use this great recipe idea, than to include it into my Sunday Breakfast Series. With that, welcome to the second installment of the series with the Breakfast Pizza.

To prepare the dough I followed Deb’s directions. The day before the actual breakfast, I mixed in yeast to a bowl filled with 1/3 cup of water. Added the flour and added the salt and used my hand held, electric mixer to mix the ingredients, increasing the speed every couple of minutes until the mixture took on dough consistency. I sprinkled additional flour onto my wooden cutting board, turned the dough out of the bowl on the floured cutting board and divided into two portions. Once that was all done, I put the board with the dough into a plastic grocery bag and refrigerated it until the following morning.

When the morning arrived I was very excited about the dough waiting for me in the fridge and the prospect of making pizza for the first time ever. For my toppings I used the following:

Slices of Turkey kielbasa
Sliced Red Onion
Mozzarella Cheese
Eggs
Scallions
Cilantro (my all time favorite herb)

I tried doing the cool, twisting of the dough thing, by putting the dough over my fists, however, I failed miserably. Therefore, my pizza took on the shape of my rectangular cookie sheet that I baked it in (I do not own a pizza stone). I heated the oven to 500 degrees Fahrenheit, laid out the dough on the cookie sheet, covered the dough with mozzarella cheese, turkey kielbasa, slices of red onion and raw eggs. I put the pizza in the oven for approximately 10 minutes and…VOILA!

A fabulous breakfast, A (the husband) raved about it for at least a couple of days. I won’t lie, I was pretty proud of myself, even though the pizza wasn’t actually round.

Chocolate Challah

I have some exciting news!

If you might recall a few months ago I put out a call for chocolate challah recipes. Well after receiving zero responses, I continued the search on my own and finally came upon the recipe for a fabulous chocolate challah on Food.com. This chocolate challah was very well received by the family and actually stayed fresh for an entire week.

I won’t keep you in suspense any longer, so without further adieu…

Latkes…a little late for Hanukkah

I know I am a little late for Hanukkah…well let’s be honest a lot late…but I finally had time to prepare potato latkes. Might I add, this is my very first time making latkes. I am happy to report that this endeavor was a thorough success. See for yourself…

Along the way I found out that unlike myself, most people use a meat grinder to shred potatoes for latkes. I on the other hand…did it all manually…with a regular grater…yep, pretty proud of myself. Although, I think it’s time to look into a food processor. Any suggestions for a food processor would be welcome!

Now let’s get to the task at hand, the recipe. I recently acquired an iphone (very cool toy). With this acquisition I discovered the world of recipe apps. At this point I have about 3 or 4 recipe apps, and mind you, I’ve only had the phone for a couple of weeks.

The recipe for these latkes came from the Epicurious app. This recipe can also be found on the original website. The recipe for these delicious latkes can be found here. I will avoid rewriting it as I didn’t divert from the original.

Sweet and Sour Chicken

Ask my husband what his favorite dish is at a Chinese restaurant and he’ll tell you it’s sweet and sour pork. Well, at home I make a variation. The variation being…the other white meat.
Sweet-and-Sour-Chicken
I bet you’d like to know how to get this delicious tender meat on your plate. Well here is how:
Ingredients:
Skinless chicken breasts
Flour
Vegetable oil (for frying)
Kikkoman Sweet & Sour Sauce
How to get there:
Cut chicken breasts into cubes and toss with flour. Heat the vegetable oil in a frying pan. Add the flour-tossed chicken to the frying pan. Cook until chicken is fully cooked through. Toss with the sweet and sour sauce and serve.
