Cook and Tell: Baked Brie in Puff Pastry

Continuing on with the carb theme. Today I wanted to share a simple appetizer with you. It came to me as I was sitting at home and craving a snack. My husband is a big fan of Brie. He buys the big rounds of Brie, so we almost always have it at home. I tend to keep a package of puff pastry squares on hand as well. Together these two great ingredients make a quick, easy and delicious snack, or appetizer.

Baked Brie in Puff Pastry
Ingredients:
Puff Pastry Squares
Brie Cheese
1 egg or egg white (for brushing)
Cooking spray

Preparation:

Preheat the oven to 350 degrees Fahrenheit.

Spray a cookie sheet with cooking spray.

Cut each puff pastry square into 4 small squares. Cut Brie into small pieces (without crust) and place each piece of cheese on the small puff pastry squares. Fold each of the four corners of each puff pastry square over the cheese, creating little pouches. Place the folded puff pastry pouches onto the cookie sheet.

Beat one egg. Brush each puff pastry pouch with the beaten egg.

Cook for approximately 25 minutes, or until the puff pastry pouches are golden and nicely puffed up.

There it is, simple and delicious. I can pop these babies in like chips. I know it’s probably not the greatest idea, but they are so so good!

Cook and Tell: Breakfast Sandwich

A few years ago I spent a year in New York. New York has tons of culinary options for your taste buds. Today however, I wanted to share something simple that I enjoyed on an average workday morning but which brightened my day.

Every Friday morning, on my way into the office, I stopped off at a cafe that was conveniently located on the first floor of my building. There in that cafe, every morning, one could order a bagel breakfast sandwich, made to order, right in front of the customer. My order was simple, plain toasted bagel, with egg and cheese. The hot fried egg and warm toasted bagel would make the cheese melt in the wrapper. By the time I was at my desk, unwrapping the bagel, I would have a delicious, warm breakfast sandwich with egg and melted cheese. I know this might sound strange, but I have fond memories of those Friday mornings and the tasty breakfast sandwiches.

I decided to recreate a version of the breakfast sandwich that I so much enjoyed. You can definitely play around with the kinds of ingredients you include in this sandwich. After all, anything goes with a bagel.

Breakfast Sandwich:

Thomas’ Plain Bagel thin (less calories than a regular bagel)
1 Egg
Salt and Pepper
A little bit of non-fat milk
1 slice Havarti cheese
1 slice mortadella
4 cucumber slices, extra slices for garnish
Pam Cooking spray for frying

Toast the bagel to your liking. While the bagel is toasting, beat the egg with milk. Add salt and pepper to taste and beat until fully combined. Fry the egg mixture on a skillet coated with cooking spray. Place bottom side of the bagel on a plate and layer with a slice of Havarti, fried egg, mortadella and cucumber slices, finishing off with the top side of the bagel.

That’s all there is to a very tasty start to any morning…

Puff Pastry Triangles

Before proceeding to today’s recipe I wanted to share that I was the lucky winner of a cordless Cuisinart hand held blender, courtesy of FoodBuzz.com. This was an unexpected and exciting occurrence. I received the blender this evening. I want to thank FoodBuzz.com for the lovely surprise!!!

Now to our next yummy dish. Today I’d like to share with you some tasty treats. In the spirit of easy-to-make dishes, this is a VERY easy to make dessert. Feast your eyes on puff pastry triangles with cherry filling.
Puff-Pastry-Triangle

Here is what you need to make these tasty triangles:
10 Puff pastry dough squares (usually sold frozen)
1 can of cherry topping
1 egg white, beaten
Powdered sugar
cooking spray

Preheat oven to 350 Degrees Fahrenheit.

Thaw frozen pastry squares until soft. Place approximately 6 cherries with sauce onto one pastry square. Fold over the pastry square to create a triangle. Press the edges to seal. I usually press the edges with a fork to make sure they are sealed and to create attractive edges. Brush the edges with beaten egg whites. Repeat these steps for the rest of the puff pastry squares.

Spray a cookie sheet with cooking spray (to prevent the triangles from sticking). Place triangles on cookie sheet and bake for approximately 30 minutes, or until the pastry rises and becomes golden. Top with some powdered sugar. Let cool and serve.
