We often have last minute guests over. During these times I have to come up with quick appetizers to put on the table. Since often times our guests visit us in the later part of the day, it’s only a plus when these quick appetizers are light on the stomach.

These appetizers are easy on the eyes and on the stomach. They are easy to make and require no cooking time. The Food Network has come through again. The combination of meat and fruit are very refreshing.

And now on to the second part of my post. I’ve been throwing some ideas around and thought it would be great to add a guest post to the blog. This is a call for guest bloggers! If anyone is interested in sharing an interesting recipe with a fabulous photo to go along with it, please let me know. I would love to share it with my readers.

 

Strawberry-Goat Cheese Bruschetta

Last week my boss shared with me a great recipe for strawberry goat cheese bruschetta. I have to say this is one of the few times that I didn’t lose any time, and on the way home stopped by the store and picked up all the ingredients needed for this amazing appetizer. In fact I made the dish that very same night, when I got home. The strawberry goat cheese bruschetta was the main meal for me that night.

This appetizer is mouth watering (exactly the sensation I experienced when I first laid eyes on it). And why not? All the ingredients individual and together are delicious. In the Kitchen With…Vicky

It’s finally here, the first installment of my new series “In the Kitchen With…” And the first participant is Vicky. Who is very passionate about cooking and let’s face it, is IN LOVE with shrimp, many many shrimp.
Of course it came as no surprise when Vicky told me that she’ll be preparing Bruschetta with Shrimp, Tarragon and Arugula.
I came prepared, empty stomach and all. I got the camera out and Vicky went to work.
First, she cut up a ciabatta loaf, placed the slices on a baking sheet and drizzled then with olive oil. She baked the bread slices in the oven at 400 degrees.

Once the bread slices were baked, she rubbed each slice with a clove of garlic, and set them aside.

Then she went to work on the bruschetta topping. She chopped up a clove of garlic and sliced a medium sized shallot.

She cooked the shallots and garlic in a skillet with some olive oil, until both were soft.

Once the shallots and garlic softened, she added about a pound of raw, peeled shrimp (without tails). She cooked the shrimp until they were pink. Once the shrimp were cooked she removed them from the skillet, leaving the shallots and garlic in the skillet. She chopped up the shrimp and set them aside.

Vicky then chopped up three tablespoons of tarragon leaves and one packed cup of arugula.

Vicky then proceeded to chop up six Roma tomatoes.

She measured out one quarter of a cup of white wine, one quarter of a cup of low-sodium chicken stock, and one half of a cup of mascarpone cheese.

Once all the ingredients were chopped and measured, they were all added to the skillet. She also added the chopped shrimp back to the skillet, and mixed everything together. She continued to cook all the ingredients together, stirring until the mixture was creamy. She seasoned the mixture with salt and pepper to taste.

Once the mixture was cooked, she topped a slice of the ciabatta loaf with the mixture. Finally, meet the proud chef with her completed dish.

I would consider the first installment of my series a complete success. Of course I had to taste the final product to vouch for it. Let me tell you, I give it two thumbs up, it was delicious.

Asian Pear and Arugula Salad

You’re probably wondering why I haven’t been around for a while. With the kitchen remodel and the change of seasons it’s been difficult to get any day light time. My friend V, and occasional food contributor was very kind to gift me a subscription to Food & Wine magazine. I am loving my new subscription. I’ve a made a couple of things based on the recipes from F&W already (unfortunately didn’t get a chance to photograph them). Finally I was able to capture my latest dish.

This is a super easy salad to throw together. I was flipping through my first issue of F&W magazine and came upon the Asian Pear and Arugula Salad with Goat cheese. I threw this together for a refreshing lunch for my husband and I.

I very slightly modified the original recipe. Here is what I did:

Ingredients:
Baby Arugula
1 Peeled, cored and thinly sliced asian pear
Slivered Almonds
Extra virgin olive oil
Honey
Chopped fresh thyme
Lemon juice
Salt and black pepper
Crumbled goat cheese

For the dressing:
Whisk together the olive oil, lemon juice, honey and chopped thyme. Season with salt and pepper.

In a separate bowl, toss together arugula, asian pears, and slivered almonds. Add the earlier mentioned dressing and toss well. Top with goat cheese and serve.

This salad is perfect for a light and refreshing lunch!

 

Egg Salad

New day, new dish. Today I decided to make one of my signature and favorite dishes, my egg salad , but with a slight twist.

Egg-Salad
To make the salad you’ll need the following:
5 Hard boiled eggs
Scallions
Shredded mozzarella and american cheeses (or any other types of shredded cheeses)
Mayonnaise (approximately 1 tbsp)

Grate the eggs and chop the scallions. Mix together the grated eggs, chopped scallions, shredded mozzarella cheese and shredded american cheese with mayonnaise. Chill slightly and serve. It’s that easy!

Healthy Snack

On Sunday I decided to make a healthy snack. I gave it some thought and here is what I came up with…
Goat Cheese Toasties with Arugula Salad
…an Arugula salad with Goat Cheese Toasties.

To create this all you’ll need is a baguette, cut up into slices, some beaten eggs and garlic powder. Dip the baguette slices in beaten eggs (mixed with garlic powder) and bake for 10-15 minutes at 325F.

To create the lovely salad, you’ll need some arugula leaves, tomatoes (cherry, pear, and/or grape), cucumbers and Balsamic Vinaigrette Dressing.

Cut up the vegetables, toss with the Balsamic Vinaigrette Dressing and serve with the toasties, topped with goat cheese.
